			<content:encoded><![CDATA[<p>Is a gluten free diet a trend?  A fad?  A way to clearer skin?  A thinner body? Why the upswing in people becoming gluten free and turning to gluten free products? Some people don&#8217;t really get it, but we do and learning more every day. </p>
<p>We take Celiac Disease and gluten intolerance very seriously.  Celiac Disease affects 1% of healthy, average Americans. That means at least 3 million people in our country are living with Celiac disease, but 97% of them are undiagnosed.</p>
<p>So, more than likely the trend is upward because every day more and more of that 97% of 3 million people are feeling symptoms and turning to a gluten free diet even though they have not been diagnosed with Celiac Disease. Even if being gluten free just makes you feel better, that&#8217;s OK, too. </p>
<p>That&#8217;s why we are in this with you. You don&#8217;t have to be have Celiac Disease or be gluten intolerant to understand. Who knows, perhaps we are and don&#8217;t know it. </p>
